2 Ripe fresh apricots
1tsLime juice
1/2 Packet sugar substitute
2 Fresh mint leaves
  Ice cubes

Puree in a food processor or blender with lime juice, sugar substitute, and 1 mint leaf. Add 2 ice cubes or crushed ice. Process on and off to blend. Pour into serving glass. Garnish with remaining mint leaf. Yield: 1 each 1/2 cup serving.
